Chinese Appetizer Recipe - Chinese Almond Cookies
- 2 1/2 cups wheat flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1 cup butter
- 2 eggs, beaten
- 1/8 teaspoon salt
- 1 tablespoon almond extract
- 1/4 lb. whole almonds.
- In a food processor, mix the flour, sugar, baking soda, butter, salt until it forms balls. Add egg, almond extract, mix well.
- Roll the dough on a floured surface. Cut the dough with 2 1/2 in. cookie cutter.
- Preheat the oven to 325 F degrees. Spray the cooking sheet with oil, place the cookies on the sheet, and place an almond on each of the cookie. Bake for 25 minutes.
Timing: 1 hour to prepare and cook.
