Chinese Appetizer Recipe - Chinese New Year's Cake (Nian Gao)
- 1 lb. sweet rice flour
- 3/4 cup olive oil
- 3 eggs
- 2 1/2 cups 2% milk
- 1 1/2 cups sugar
- 1 tablespoon baking soda
- 1 can red azuki beans
- Mix rice flour, oil, eggs, milk, sugar, baking soda with an electric mixer at medium speed for 2 minutes. Beat at high speed for 3 more minutes.
- Spray the baking pan with oil, and sprinkle some rice four on the bottom. Spread half of the batter on the baking pan. Spread the red azuki beans over the butter. Then spread the other half of the batter over the red azuki beans.
- Bake in over at 350 F degrees for 50 minutes.
- Cool down the cooked cake. Cut in 1/2 in. slices, pan fry slightly to serve.
Timing: 1 hour to prepare and cook.
